1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 cup pecans, finely chopped

1/2 cup mini chocolate chips (optional)

1/2 cup corn syrup

1 teaspoon cinnamon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry mixture to the wet mixture, stirring until just combined.

          Fold in Pecans and Chocolate Chips: Gently fold in the chopped pecans and mini chocolate chips (if using) until evenly distributed.

            Prepare for Baking: Using a tablespoon, scoop the cookie dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

              Make the Pecan Filling: In a small bowl, mix together the corn syrup and a pinch of salt. Use a teaspoon to drizzle a small amount of this corn syrup mixture over the center of each cookie.

                Top with Pecans: If desired, place an additional pecan half on top of each cookie for garnish and additional flavor.

                  Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The center may look slightly underbaked – that's okay; they will set as they cool.

                    Cool: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
