Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Cheesecake Layer:

16 oz cream cheese, softened

½ cup granulated sugar

1 tsp vanilla extract

2 large eggs

⅓ cup sour cream

Pecan Pie Layer:

1 cup pecans, chopped

¾ cup brown sugar, packed

¼ cup corn syrup

2 large eggs

2 tbsp unsalted butter, melted

1 tsp vanilla extract

¼ tsp salt

Topping (Optional):

Whipped cream

Additional pecans for garnish

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper.

      - In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.

        - Press the crumb mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

          Make the Cheesecake Layer:

            - In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

              - Gradually add the granulated sugar and vanilla extract, mixing until fully incorporated.

                - Add the eggs one at a time, mixing just until blended. Do not overmix.

                  - Stir in the sour cream until the mixture is smooth.

                    - Pour the cheesecake batter over the cooled crust and spread evenly.

                      Prepare the Pecan Pie Layer:

                        - In a separate bowl, combine the chopped pecans, brown sugar, corn syrup, eggs, melted butter, vanilla extract, and salt. Mix until well combined.

                          - Pour the pecan mixture over the cheesecake layer, using a spatula to spread gently if necessary.

                            Bake the Bars:

                              - Return the pan to the oven and bake for 30-35 minutes, or until the pecan layer is set and a toothpick inserted into the cheesecake comes out clean.

                                - Remove the pan from the oven and let it cool at room temperature for at least 1 hour. Then refrigerate for at least 3 hours or overnight for best results.

                                  Serve:

                                    - Once chilled, lift the cheesecake out of the pan using the parchment paper (if used). Cut into bars and serve with whipped cream and additional pecans if desired.
