Ingredients

1 cup pecans, finely chopped

1 cup graham cracker crumbs

1/2 cup powdered sugar

1/4 cup brown sugar, packed

1/3 cup maple syrup

1/4 cup unsweetened cocoa powder

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup semi-sweet chocolate chips (for coating)

Extra chopped pecans (for rolling)

Instructions

In a large mixing bowl, combine finely chopped pecans, graham cracker crumbs, powdered sugar, brown sugar, cocoa powder, and salt. Mix until well combined.

Add maple syrup and vanilla extract to the dry ingredients. Stir thoroughly until the mixture is cohesive and forms a thick dough.

Use your hands to roll the mixture into small balls, about 1-inch in diameter. Place them on a parchment-lined tray.

Once all the balls are formed, freeze them for about 30 minutes to help them firm up.

While the balls are chilling, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.

Remove the pecan balls from the freezer. Dip each ball into the melted chocolate, ensuring it's fully coated. Allow excess chocolate to drip off.

Roll the chocolate-coated balls in extra chopped pecans for added texture and flavor.

Place the coated balls back on the parchment-lined tray and refrigerate for another 15-20 minutes to set the chocolate completely.

Once set, serve immediately or store in an airtight container in the refrigerator for up to one week.
