1 cup rolled oats

2 cups almond milk (or any milk of choice)

2 ripe bananas (1 mashed and 1 sliced)

3 tablespoons natural peanut butter

2 tablespoons honey or maple syrup (optional, for sweetness)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of salt

Chopped nuts (e.g., walnuts or pecans) for topping

A sprinkle of chia seeds (optional)

Instructions
 

In a large mixing bowl, combine the rolled oats, almond milk, mashed banana, peanut butter, honey (if using), vanilla extract, ground cinnamon, and a pinch of salt. Stir well until the mixture is smooth and well combined.

    Divide the oat mixture evenly into mason jars or storage containers. Top each serving with slices of the remaining banana.

      Seal the containers with lids and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.

        In the morning, give the oats a good stir. If desired, add a splash more milk for a looser consistency.
