Ingredients

4 cups canned or fresh peaches (sliced, drained if using canned)

1 cup granulated sugar (adjust based on the sweetness of the peaches)

1 teaspoon ground cinnamon

1 box yellow cake mix (16.25 oz)

1 cup unsalted butter (melted)

1/2 cup chopped pecans or walnuts (optional for added crunch)

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.

In a large bowl, combine the sliced peaches with granulated sugar, vanilla extract, and ground cinnamon. If using, add the chopped pecans or walnuts. Mix well to coat the peaches evenly and let sit for about 10 minutes.

Pour the peach mixture into the prepared baking dish, spreading it evenly across the bottom.

Evenly sprinkle the dry yellow cake mix over the peach mixture. Do not stir; you want the cake mix to rest on top of the peaches.

Drizzle the melted butter evenly over the cake mix, ensuring all areas are covered. This will help create a crust as it bakes.

Optional: For an extra bit of crunch and flavor, sprinkle a little extra cinnamon and sugar over the top.

Bake in the preheated oven for about 40-45 minutes or until the top is golden brown and the peaches are bubbling.

Once baked, remove from the oven and allow to cool slightly. Serve warm, preferably with a scoop of vanilla ice cream or dollop of whipped cream!
