4 cups fresh peaches, peeled and sliced

1 cup granulated sugar, divided

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1/2 teaspoon almond extract (optional)

Ice cream or whipped cream for serving (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the sliced peaches with 1/2 cup of sugar, vanilla extract, lemon juice, and 1/2 teaspoon of cinnamon. Toss gently to combine, then set aside to macerate for about 15 minutes.

      In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.

        Slowly add the milk to the dry mixture and stir until just combined. Fold in the melted butter and almond extract if using. The batter will be somewhat lumpy, which is fine — do not overmix.

          Pour the batter into a greased 9x13-inch baking dish, spreading it out evenly.

            Spoon the macerated peaches and their juices over the batter, but do not stir. The peaches will sink as it bakes, creating that lovely cobbler effect.

              Sprinkle the remaining cinnamon on top.

                Bake in the preheated oven for 35-40 minutes or until the batter is golden brown and a toothpick inserted into the center comes out clean.

                  Allow to cool slightly before serving warm with a scoop of ice cream or a dollop of whipped cream.
