1 loaf of brioche or challah bread, cubed

6 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup maple syrup (plus extra for serving)

1 cup fresh blueberries (or your choice of fruit)

1/2 cup chopped pecans (optional)

Powdered sugar for dusting

Instructions
 

Prepare the Bread: In a large mixing bowl, combine the cubed brioche or challah bread with the blueberries and pecans (if using). Toss gently so the bread is evenly coated with the fruit and nuts.

    Make the Custard: In another bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

      Combine: Pour the custard mixture over the bread cubes. Gently stir to ensure all the bread is soaked in the mixture. Drizzle the maple syrup on top and lightly mix again.

        Cover and Refrigerate: Spread the mixture evenly in a greased 9x13 inch baking dish. Cover tightly with plastic wrap or aluminum foil and refrigerate overnight (for at least 6 hours).

          Preheat and Bake: The next morning, preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature while the oven is warming up.

            Bake: Remove the cover and bake for 40–50 minutes, or until the top is golden brown and the casserole has set.

              Serve: Allow it to cool for about 10 minutes. Dust with powdered sugar before slicing and serving. Serve warm with extra maple syrup on the side.
