1 lb Italian sausage (mild or spicy, as preferred)

4 cups chicken broth

1 medium onion, diced

3 cloves garlic, minced

4 medium potatoes, thinly sliced

2 cups kale, chopped (stems removed)

1 cup heavy cream

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Olive oil (for cooking)

Parmesan cheese (for serving)

Brown the Italian Sausage: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it apart with a spoon as it cooks. Remove the sausage and set aside.

    Sauté the Aromatics: In the same pot, add the diced onion and garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Add Potatoes and Broth: Add the sliced potatoes to the pot, followed by the chicken broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.

        Incorporate the Kale: Once the potatoes are tender, stir in the chopped kale and cooked sausage. Let it simmer for an additional 5 minutes until the kale has wilted.

          Stir in Cream: Lower the heat and pour in the heavy cream. Stir to combine, making sure everything is well mixed. Add red pepper flakes, salt, and pepper to taste.

            Final Touch: Allow the soup to heat through for another 2-3 minutes. If the soup seems too thick, you can add a bit more chicken broth to reach your desired consistency.
