1 pound ground beef (or turkey)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

2 teaspoons taco seasoning (store-bought or homemade)

1 can (14.5 oz) diced tomatoes with green chilies

2 cups low-sodium chicken broth

8 oz rotini pasta (or pasta of choice)

1 cup corn (frozen or canned)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

¼ cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: sour cream, diced avocado, sliced jalapeños

Instructions
 

Prepare the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Add the ground beef (or turkey) to the pot, breaking it apart with a spatula. Season with salt, pepper, and taco seasoning. Cook until the meat is browned and fully cooked, about 5-6 minutes. Drain excess fat if necessary.

      Combine Ingredients: Stir in the diced tomatoes with their juices, chicken broth, and uncooked rotini pasta. Bring the mixture to a boil.

        Cook the Pasta: Once boiling, reduce the heat to a simmer, cover the pot, and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Add Final Touches: Once the pasta is cooked, fold in the corn and black beans until heated through. Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
