1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup bell pepper, diced (any color)

1 cup long-grain white rice

2 cups beef broth

1 can (14 oz) diced tomatoes with green chilies

1 tablespoon soy sauce

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Brown the Beef: In a large pot or Dutch oven over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula (about 5-7 minutes). Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion and bell pepper to the pot. Sauté for about 3-4 minutes until onions are translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Rice and Liquids: Stir in the uncooked rice, beef broth, diced tomatoes (with juice), soy sauce, paprika, oregano, cumin, salt, and pepper. Bring the mixture to a gentle boil.

        Simmer: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid. If the rice seems undercooked and too dry, you can add a splash more broth or water and let it simmer for a few more minutes.

          Add Cheese: Once the rice is tender, remove the pot from heat and sprinkle the shredded cheddar cheese over the top. Cover the pot for an additional 5 minutes to allow the cheese to melt.

            Garnish and Serve: Fluff the casserole with a fork, garnish with fresh parsley if desired, and serve warm.
