4 boneless, skinless chicken thighs

1 cup balsamic vinegar

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 cup fresh spinach

Fresh basil, for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together balsamic vinegar, honey, minced garlic, oregano, thyme, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes (or overnight for best flavor) in the refrigerator.

    Sear the Chicken: In a large skillet or pan over medium heat, add olive oil. Once hot, remove chicken from the marinade (reserve marinade) and sear for about 5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

      Cook the Vegetables: In the same pan, add cherry tomatoes and cook for 3-4 minutes until they start to blister. Add fresh spinach and cook until just wilted.

        Combine and Simmer: Return the chicken to the pan, pour the reserved marinade over the chicken and vegetables. Bring it to a simmer, cover, and let it cook for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).

          Serve: Plate the balsamic chicken with the sautéed cherry tomatoes and spinach, drizzling any remaining sauce from the pan on top. Garnish with fresh basil if desired.
