2 cups all-purpose flour

1 tsp salt

1 tsp instant yeast

1 cup warm water (110°F)

3 tbsp olive oil, divided

4 cloves garlic, minced

2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)

Optional: pinch of red pepper flakes for heat

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, salt, and instant yeast until well combined.

    Add Wet Ingredients: Pour in the warm water and 2 tablespoons of olive oil. Stir with a wooden spoon or spatula until a loose, wet batter forms, ensuring there are no dry patches of flour. The dough will be sticky but should hold together.

      Ferment the Dough: Cover the bowl with plastic wrap or a kitchen towel, and let it sit at room temperature for about 2-3 hours, or until it has doubled in size and bubbles appear on the surface.

        Preheat the Oven: After the dough has risen, preheat your oven to 450°F (232°C). If you are using a baking stone or cast-iron skillet, place it in the oven to heat as well.

          Prepare the Garlic Topping: In a small bowl, mix the minced garlic, chopped parsley, and remaining 1 tablespoon of olive oil. Set aside to allow the flavors to meld.

            Shape the Flatbreads: Lightly flour a clean surface and your hands. Scoop out portions of the dough (about the size of a golf ball) and gently stretch and flatten them into rounds or ovals, about 1/2-inch thick. If the dough is too sticky, dust it lightly with flour.
