2 cups Fruity Pebbles cereal

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup Fruity Pebbles cereal (for mixing in)

Additional Fruity Pebbles for topping

1 cup mixed fruit (strawberries, blueberries, bananas)

2 tablespoons honey or maple syrup

Instructions
 

Prepare the crust:

    - In a mixing bowl, combine the Fruity Pebbles cereal, melted butter, and sugar. Mix until well combined.

      - Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Set aside.

        Make the cheesecake filling:

            - Gradually add in the powdered sugar and vanilla extract, continuing to beat until fully incorporated.

              - In a separate bowl, whip the heavy cream until stiff peaks form.

                  - Gently fold in 1/2 cup of Fruity Pebbles cereal for added texture and flavor.

                    Assemble the cheesecake:

                      - Pour the cheesecake filling over the prepared crust in the springform pan, spreading evenly.

                        - Refrigerate for at least 4 hours or until set (overnight is best for optimal firmness).
