Ingredients
  

1 lb ground beef (or bison for a richer flavor)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 large onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cans (14.5 oz each) diced tomatoes, with juices

2 tbsp tomato paste

1 cup beef broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

¼ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

1 cup corn (fresh or frozen)

½ cup shredded cheddar cheese (for garnish)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes, until softened.

    Stir in the minced garlic and cook for an additional minute, until fragrant.

      Add the ground beef (or bison) to the pot. Cook until browned, breaking it up with a spatula, about 6-8 minutes. Drain any excess fat.

        Stir in the tomato paste, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for another 2 minutes to let the spices bloom.

          Pour in the diced tomatoes (with their juices), beef broth, kidney beans, black beans, and corn. Stir well to combine all ingredients.

            Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 30-40 minutes, stirring occasionally, until thickened.

              Taste and adjust seasoning as necessary. If desired, add more cayenne for heat or salt for flavor.

                Serve hot, garnished with shredded cheddar cheese and fresh cilantro. Add a dollop of sour cream if you like!
