1 ½ cups all-purpose flour

1 cup rolled oats

¾ cup brown sugar, packed

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

1 cup grated carrots (about 2 medium-sized)

½ cup crushed pineapple, drained

½ cup shredded coconut (unsweetened)

½ cup walnuts or pecans, chopped

2 large eggs

½ cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease them lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt. Stir until well combined.
