Ingredients
  

6 large eggs

1/2 cup milk (dairy or non-dairy)

1/2 cup shredded cheese (cheddar, feta, or mozzarella)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped spinach

1/4 cup diced cooked ham or cooked bacon (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil (for greasing)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, whisk together the eggs and milk until well combined.

      Stir in the shredded cheese, diced bell peppers, spinach, and ham/bacon (if using).

        Season with salt and black pepper, mixing gently until everything is evenly distributed.

          Spray a mini muffin tin (12-cup capacity) with cooking spray or lightly grease it with olive oil.

            Pour the egg mixture into each muffin cup, filling them about 2/3 full to allow for expansion.

              Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the egg bites are set and lightly golden on top.

                Remove the muffin tin from the oven and let it cool for a few minutes before carefully removing the egg bites with a small spatula.

                  Allow the egg bites to cool completely before storing them in an airtight container.

                    For on-the-go convenience, you can pack them in individual containers or freeze them for later use!
