6 large eggs

1/4 cup milk (or non-dairy alternative)

1/2 cup shredded cheese (cheddar or your favorite blend)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped spinach

1/4 cup diced cooked ham or bacon (optional)

1/4 tsp garlic powder

Salt and pepper to taste

Cooking spray or oil (for greasing)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a mini muffin tin with cooking spray or oil.

    In a large mixing bowl, whisk together the eggs and milk until well combined and slightly frothy.

      Stir in the shredded cheese, diced bell peppers, chopped spinach, and the optional diced ham or bacon.

        Add garlic powder, salt, and pepper to the mixture, adjusting the seasoning to your taste.

          Pour the egg mixture evenly into each muffin cup, filling them about halfway to allow for rising.

            Bake in the preheated oven for 15-18 minutes, or until the egg bites are set and lightly golden on top.

              Remove from the oven and let them cool slightly before gently lifting the egg bites out of the tin.

                Enjoy warm, or let cool completely and store in an airtight container in the fridge for quick breakfasts!
