Meltaway Brownie Cookies

Ingredients
  

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup packed dark brown sugar

2 large eggs

2 teaspoons vanilla extract

1 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup white chocolate chips (optional, for drizzling)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Cream the Butters and Sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar using an electric mixer until creamy and fluffy.

      Add Eggs and Vanilla: Add in the eggs one at a time, beating well after each addition. Mix in the vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.

          Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips with a spatula. Do not overmix; a few streaks of flour are okay.

            Scoop the Dough: Using a cookie scoop or tablespoons, scoop generous portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft. The cookies will firm up as they cool.

                Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                  (Optional Drizzle): If you’d like to add a white chocolate drizzle, melt the white chocolate chips in a microwave-safe bowl in 30-second increments, stirring after each, until smooth. Drizzle over the cooled cookies.
