Ingredients

1 large cucumber, diced

2 medium tomatoes, diced

1 small red onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Prep the Vegetables: Start by washing all your vegetables. Dice the cucumber, tomatoes, and bell pepper into bite-sized pieces. Finely chop the red onion and parsley.

Combine Ingredients: In a large mixing bowl, add the diced cucumber, tomatoes, bell pepper, red onion, and Kalamata olives.

Add Feta: Gently fold in the crumbled feta cheese to the mixture being careful not to break it down too much.

Make the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper.

Dress the Salad: Pour the dressing over the salad ingredients and toss gently to coat all the ingredients evenly without bruising the vegetables.

Garnish and Serve: Sprinkle the chopped parsley over the top. Let the salad sit for about 10-15 minutes to allow the flavors to meld before serving.
