4 salmon fillets (6 oz each)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for heat)

1 cup cherry tomatoes, halved

½ cup heavy cream

½ cup white wine (or chicken broth)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

¼ cup fresh basil, chopped

Zest of 1 lemon

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Salmon: In a mixing bowl, combine olive oil, minced garlic, smoked paprika, salt, pepper, and red pepper flakes (if using). Rub this mixture all over the salmon fillets.

      Searing the Salmon: In an oven-safe skillet over medium-high heat, add the salmon fillets skin-side down. Sear for about 3-4 minutes until the skin is crispy, then carefully flip to the other side and sear for another 2 minutes.

        Add Tomatoes: Once the salmon is seared, add the halved cherry tomatoes around the salmon in the skillet.

          Make the Sauce: In a separate bowl, whisk together the heavy cream, white wine, Dijon mustard, lemon juice, and lemon zest. Pour the sauce over the salmon and tomatoes in the skillet.

            Bake: Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Garnish and Serve: Remove from the oven and sprinkle chopped basil over the top. Serve immediately with lemon wedges on the side.
