2 boneless, skinless chicken breasts

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup chicken broth

1 cup heavy cream

1 cup sun-dried tomatoes, chopped

1 cup spinach leaves

2 cups cheese tortellini (fresh or frozen)

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Prepare the Chicken: Start by seasoning the chicken breasts with salt, pepper, Italian seasoning, and red pepper flakes on both sides.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear them for about 6-7 minutes on each side or until they are golden brown and fully cooked. Once done, remove them from the skillet, cover with foil to keep warm, and set aside.

      Sauté Garlic: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant.

        Make the Sauce: Pour in the chicken broth and bring it to a simmer. Scrape the bottom of the skillet to deglaze. Then stir in the heavy cream and let it simmer for 3-4 minutes.

          Add Sun-Dried Tomatoes and Spinach: Mix in the chopped sun-dried tomatoes and fresh spinach. Stir until the spinach wilts, about 2 minutes.

            Cook Tortellini: Add the cheese tortellini into the skillet and continue to cook until the tortellini is tender and heated through, according to package instructions, usually about 3-5 minutes.

              Combine with Chicken: Slice the seared chicken breasts and nestle them back into the skillet. Sprinkle in the grated Parmesan cheese and mix gently until everything is evenly coated and warmed.

                Serve: Spoon the Marry Me Chicken Tortellini into bowls, garnishing with fresh basil and additional Parmesan cheese if desired.
