Ingredients
  

8 large flour tortillas

10 large eggs

1 cup shredded cheddar cheese

1 cup diced bell peppers (any color)

1 cup cooked and crumbled breakfast sausage (or vegetarian substitute)

1 cup cooked and diced potatoes (or hash browns)

½ cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

Salt and pepper to taste

Salsa (for serving, optional)

Instructions
 

Prepare the Ingredients:

    - In a skillet, heat the olive oil over medium heat. Sauté the diced bell peppers for about 5 minutes until they are soft.

      - In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Pour this mixture into the skillet with the bell peppers.

        Cook the Eggs:

          - Cook the egg mixture over medium heat, stirring frequently, until the eggs are fully scrambled and cooked through. Remove from heat and let cool slightly.

            Assemble the Burritos:

              - Lay out a tortilla on a flat surface. In the center, layer a portion of the scrambled eggs, crumbled sausage, diced potatoes, and a sprinkle of cheese.

                - Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to create a burrito. Repeat this process with the remaining tortillas and filling.

                  Freeze the Burritos:

                    - Wrap each assembled burrito tightly in aluminum foil or plastic wrap. Place them in a freezer-safe zip-top bag or airtight container, labeling with the date.

                      Reheat and Serve:

                        - When ready to eat, remove a burrito from the freezer and unwrap it. Microwave on high for about 2-3 minutes or until heated through, or heat it in an oven at 350°F (175°C) for 20 minutes (wrapped in foil).

                          - Serve with salsa if desired.
