Ingredients

For the Lobster Waffles:

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup melted butter

1 cup cooked lobster meat, chopped

2 tablespoons chives, finely chopped

For the Creamy Hollandaise Sauce:

3 large egg yolks

1 tablespoon lemon juice

1/2 cup unsalted butter, melted and slightly cooled

Pinch of cayenne pepper (optional)

Salt, to taste

Fresh chives, for garnish

Instructions

Preheat the Waffle Iron: Start by preheating your waffle iron according to the manufacturer’s instructions.

Make the Waffle Batter: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, combine the buttermilk, eggs, and melted butter. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the cooked lobster meat and chives.

Cook the Waffles: Grease the waffle iron lightly with cooking spray or butter. Pour the batter into the preheated waffle iron, using enough to cover the grates without overflowing. Close the lid and cook until the waffles are golden brown and crisp. This usually takes about 3-5 minutes, depending on your waffle iron. Repeat with the remaining batter.

Prepare the Hollandaise Sauce: In a heatproof bowl, whisk the egg yolks and lemon juice together until the mixture is pale and thick. Place the bowl over a pot of simmering water (double boiler method) and continue whisking until the yolks become light and fluffy.

Add the Butter: Slowly drizzle in the melted butter while whisking continuously until the sauce is thickened and emulsified. If needed, add a pinch of cayenne pepper and season with salt to taste.

Serve: To serve, place a warm lobster waffle on a plate, drizzle generously with creamy hollandaise sauce, and garnish with additional chopped chives.

Enjoy: Serve immediately while hot, and enjoy your delightful Lobster Waffles!
