Ingredients
  

4 boneless, skinless chicken breasts

6 medium-sized russet potatoes, peeled and cubed

1 cup sour cream

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup bacon bits (cooked)

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups chicken broth

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Potatoes: In a large pot, add the cubed potatoes and cover with chicken broth. Bring to a boil and cook until tender, about 12-15 minutes. Drain and set aside.

      Prepare the Chicken: In a skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove from skillet and let it rest, then chop into bite-sized pieces.

        Mix the Casserole Base: In a large mixing bowl, combine the cooked potatoes, sour cream, ranch dressing, half of the cheddar cheese, and half of the bacon bits. Stir until all ingredients are well combined.

          Combine Chicken with the Mixture: Fold the chopped chicken into the potato mixture, ensuring everything is well coated.

            Assemble the Casserole: Pour the entire mixture into a greased 9x13 inch casserole dish. Spread evenly. Top with the remaining cheddar cheese and bacon bits.
