4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

6 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese, plus more for garnish

1/2 cup crispy bacon, crumbled (plus extra for garnish)

1/4 cup sour cream (for serving)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

3 green onions, sliced (for garnish)

2 tablespoons butter

2 tablespoons all-purpose flour (optional, for thickening)

Instructions
 

Cook the Potatoes: In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until softened, about 3-4 minutes.

    Combine Ingredients: Add the diced potatoes to the pot along with the dried thyme, paprika, and broth. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.

      Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup. Alternatively, transfer to a blender in batches and blend until desired consistency is reached.

        Add Cream and Cheese: Return the blended soup to low heat, and stir in the heavy cream and shredded cheddar cheese. Cook until the cheese is melted and the soup is heated through. If you want a thicker soup, mix the flour with a little broth to create a slurry, and add it to the soup while stirring.

          Season: Taste and season with salt and pepper as needed.

            Serve: Ladle the soup into bowls and top with crumbled bacon, additional cheese, a dollop of sour cream, and sliced green onions.
