4 large russet potatoes

6 slices of thick-cut bacon, chopped

2 cups shredded cheddar cheese

1 cup sour cream

1/2 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Wash and scrub the russet potatoes thoroughly. Pat them dry, and cut each potato into thick-cut fries (about 1/2 inch wide).

    Season and Roast: In a large bowl, toss the cut fries with olive oil, garlic powder, paprika, salt, and pepper until evenly coated. Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.

      Cook the Bacon: While the fries are baking, cook the chopped bacon in a skillet over medium heat until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease.
