Limoncello Ricotta Cake

1 cup ricotta cheese

1 cup granulated sugar

1/2 cup limoncello liqueur

1/4 cup lemon juice (freshly squeezed)

Zest of 2 lemons

3 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

Powdered sugar (for dusting)

Fresh berries (optional, for garnish)

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan or line it with parchment paper.

    In a large mixing bowl, add the ricotta cheese and granulated sugar. Beat together until well combined and creamy, ensuring there are no lumps.

      Incorporate the wet ingredients: Add the limoncello, lemon juice, lemon zest, eggs, and vanilla extract to the ricotta mixture. Whisk until smooth and well blended.

        In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

          Pour the batter into the prepared springform pan and smooth the top with a spatula.

            Bake in the preheated oven for 40-45 minutes, or until the cake springs back when lightly touched and a toothpick inserted into the center comes out clean.

              Let the cake cool in the pan for about 10 minutes, then run a knife around the edges to loosen. Carefully remove the sides of the springform pan and allow the cake to cool completely on a wire rack.

                Once cooled, dust with powdered sugar and garnish with fresh berries, if desired.
