For the Crust and Topping:

1 ¾ cups all-purpose flour

¾ cup granulated sugar

½ teaspoon salt

½ teaspoon baking powder

½ cup unsalted butter, melted

1 teaspoon vanilla extract

For the Lemon Filling:

2 large eggs

1 cup granulated sugar

¼ cup all-purpose flour

1 teaspoon lemon zest (from about 1 lemon)

⅓ cup fresh lemon juice (about 2 lemons)

½ teaspoon baking powder

Powdered sugar, for dusting

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch square baking pan or line it with parchment paper for easy removal.

    Prepare the crust: In a large mixing bowl, combine the flour, granulated sugar, salt, and baking powder. Pour in the melted butter and vanilla extract. Mix with a fork or your fingers until crumbly.

      Press into the pan: Reserve about 1 cup of the crumb mixture for the topping. Press the remaining crumb mixture into the bottom of the prepared baking pan to form an even layer.

        Bake the crust: Bake the crust in the preheated oven for 15 minutes, or until slightly golden.

          Make the filling: In a medium bowl, whisk together the eggs and granulated sugar until well combined. Add the flour, lemon zest, lemon juice, and baking powder, and whisk until smooth.

            Combine and bake: Pour the lemon filling over the hot crust, then sprinkle the reserved crumb mixture on top. Bake for an additional 20-25 minutes, or until the filling is set and the topping is lightly golden.

              Cool and dust: Allow the bars to cool completely in the pan on a wire rack. Once cooled, dust the top with powdered sugar before slicing into squares.
