½ cup unsalted butter, softened

1 cup granulated sugar

Zest of 1 large lemon

2 large eggs

2 teaspoons lemon juice (freshly squeezed)

½ teaspoon vanilla extract

½ cup powdered sugar (for rolling)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is pale and fluffy, about 3-4 minutes.

        Add Zest and Eggs: Mix in the lemon zest, followed by the eggs one at a time, ensuring each is fully incorporated. Add the lemon juice and vanilla extract, mixing until combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

            Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This will help the cookies keep their shape while baking.
