1 (8 oz) package cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

1 (15 oz) can lemon pie filling

1 (15.25 oz) box lemon cake mix

1/2 cup unsalted butter, melted

Zest of 1 lemon

1 cup powdered sugar (for frosting, optional)

1 tablespoon lemon juice (for frosting, optional)

Fresh lemon slices and mint leaves (for garnish, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a large mixing bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

      Spread the cream cheese mixture evenly on the bottom of the prepared baking dish.

        Pour the lemon pie filling over the cream cheese layer, spreading it gently to cover it evenly.

          In another bowl, combine the lemon cake mix and lemon zest. Sprinkle the dry cake mix evenly over the lemon pie filling layer.

            Drizzle the melted butter over the cake mix, ensuring all areas are covered as much as possible.

              Bake in the preheated oven for 35-40 minutes, or until the top is lightly golden and the cake mix is set.

                While the cake is baking, you can prepare an optional lemon frosting by whisking together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice or powdered sugar as needed.

                  Once the cake is done, let it cool for about 10 minutes before serving. Drizzle with the lemon frosting if desired and garnish with fresh lemon slices and mint leaves.
