For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

1/2 tsp ground cinnamon

For the cream cheese filling:

16 oz (2 packages) cream cheese, softened

1 cup powdered sugar

2 large eggs

1/4 cup freshly squeezed lemon juice

Zest of 2 lemons

1 tsp vanilla extract

For the topping:

1/4 cup powdered sugar (for dusting)

Lemon zest (optional, for garnish)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Mix until well combined. Press this mixture evenly into the bottom of the prepared baking pan. Bake for 8-10 minutes until slightly golden. Remove from the oven and let cool.

      Prepare the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy. Gradually add in the powdered sugar, mixing until fully incorporated.

        Add Eggs and Flavors: Add in the eggs one at a time, mixing well after each addition. Then, fold in the freshly squeezed lemon juice, lemon zest, and vanilla extract until smooth.

          Combine: Pour the cream cheese filling over the cooled crust, spreading it evenly.

            Bake: Bake in the preheated oven for about 25-30 minutes, or until the center is set and the edges are light golden brown.

              Cool: Once baked, remove from the oven and let it cool at room temperature. Then chill in the refrigerator for at least 3 hours, or overnight for the best texture.

                Serve: Once chilled, lift the bars from the pan using the parchment paper, cut into squares, and dust with powdered sugar. Optionally, sprinkle with additional lemon zest for a pop of color and extra flavor.
