Ingredients
  

8 oz cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 tsp vanilla extract

1 cup fresh blueberries

1 cup fresh strawberries, hulled and sliced

1 cup fresh raspberries

1 pack of graham crackers (around 14-16 sheets)

Zest of 1 lemon

Juice of 1 lemon

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, beat the softened cream cheese with the powdered sugar until fluffy and well combined.

    In another bowl, whip the heavy cream with the vanilla extract until stiff peaks form.

      Fold the whipped cream into the cream cheese mixture gently until well combined. Add lemon zest and lemon juice, mixing until incorporated.

        In a 9x13 inch baking dish, create a layer of graham crackers at the bottom.

          Spread half of the cream cheese mixture over the graham crackers.

            Sprinkle half of the mixed berries (blueberries, strawberries, and raspberries) on top of the cream cheese layer.

              Repeat the layering with another layer of graham crackers, the remaining cream cheese mixture, and top with the rest of the berries.

                Cover the dish with plastic wrap or foil and refrigerate for at least 4 hours or overnight for the best results to allow the flavors to meld and to soften the graham crackers.

                  When ready to serve, remove from the refrigerator, cut into squares, and garnish with fresh mint leaves if desired.
