Ingredients

1 cup unsweetened shredded coconut

1/2 cup sweetened condensed milk

1 cup crushed graham crackers

1 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

Additional shredded coconut for rolling

Instructions

In a large mixing bowl, combine the unsweetened shredded coconut and crushed graham crackers.

Add the sweetened condensed milk and vanilla extract to the dry mixture. Stir until all ingredients are well combined and form a sticky dough.

If using, fold in the mini chocolate chips for added sweetness and texture.

Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture. You should have about 12-15 balls.

Roll each ball in additional shredded coconut to coat them thoroughly.

Place the coconut cream balls on a baking sheet lined with parchment paper.

Chill the balls in the refrigerator for about 30 minutes to set.

Serve chilled or at room temperature as a tasty snack or dessert!
