For the Patty Melts:

1 lb ground beef (80/20 blend for juiciness)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper, to taste

4 slices of rye bread

4 slices of Swiss cheese

1 medium onion, thinly sliced

2 tbsp butter

For the Zesty Secret Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tbsp pickle relish

1 tsp hot sauce (adjust to taste)

1 tsp lemon juice

Salt and pepper, to taste

Instructions
 

Prepare the Zesty Secret Sauce: In a small bowl, combine mayonnaise, ketchup, Dijon mustard, pickle relish, hot sauce, lemon juice, salt, and pepper. Mix well until smooth. Adjust seasoning if needed. Refrigerate while preparing the patties.

    Form the Burger Patties: In a large bowl, mix the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Form into four equal patties, making a slight indentation in the center of each patty to avoid puffing during cooking.

      Cook the Patties: Heat a large skillet over medium-high heat. Add the patties and cook for about 3-4 minutes on one side. Flip them, add a slice of Swiss cheese on top of each patty, and continue cooking for an additional 3-4 minutes, or until the cheese is melted and the burgers are cooked to your desired doneness. Remove from skillet and let rest.

        Caramelize the Onions: In the same skillet, add the thinly sliced onions. Cook over medium heat, stirring often, until they are caramelized and golden brown, about 10-15 minutes. Remove from heat.

          Assemble the Patty Melts: Spread the Zesty Secret Sauce on one side of each slice of rye bread. On the un-sauced side, layer an onion slice, then the cheesy burger patty, and another layer of caramelized onions. Top with another slice of rye bread, sauce side down.

            Grill the Patty Melts: Wipe the skillet clean and return to medium heat. Add 1 tbsp of butter. Once melted, place the sandwiches in the skillet. Grill until golden brown and crispy, about 3-4 minutes per side. Repeat for the remaining sandwiches, adding more butter as necessary.

              Serve: Remove the patties from the skillet and slice in half. Serve hot with extra Zesty Secret Sauce on the side for dipping.
