Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

1 cup orzo pasta

4 cups chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

2 cups fresh spinach, roughly chopped

1 cup grated Parmesan cheese, plus more for serving

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Instructions
 

Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, crumble the Italian sausage into the skillet. Cook, stirring frequently until browned and cooked through, about 5-7 minutes. Use a slotted spoon to remove the sausage and set aside, leaving the grease in the pan.

    Sauté Aromatics: In the same skillet, add the diced onion. Sauté for approximately 3-4 minutes until the onion becomes translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Prepare the Orzo: Stir in the orzo, allowing it to toast slightly for 1-2 minutes. This enhances its flavor.

        Add Liquid: Pour in the chicken broth and bring to a boil. Stir in the tomato paste, dried oregano, dried basil, red pepper flakes (if using), and season with salt and pepper.

          Simmer: Reduce the heat to low and let it simmer uncovered for about 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed, stirring occasionally.

            Combine Ingredients: Once the orzo is cooked, add the sausage back into the skillet along with the cherry tomatoes and fresh spinach. Stir until the spinach wilts and everything is well combined, about 2-3 minutes.

              Finish with Cheese: Stir in the grated Parmesan cheese until melted and combined. Taste and adjust seasoning if necessary.

                Serve: Remove from heat and serve warm. Garnish each serving with fresh basil leaves and additional Parmesan cheese if desired.
