For the crust:

1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup brown sugar

1/2 cup unsalted butter, melted

For the filling:

1 can (20 oz) crushed pineapple, drained

1/2 cup granulated sugar

1/4 cup cornstarch

4 large eggs

1 teaspoon vanilla extract

1/4 teaspoon salt

1 teaspoon lemon juice

1/2 cup chopped macadamia nuts (optional)

For the topping:

1/2 cup sweetened whipped cream

Extra shredded coconut for garnish

Instructions
 

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix together graham cracker crumbs, shredded coconut, brown sugar, and melted butter until well combined.

        - Press the mixture firmly into the bottom of an 8x8-inch (20x20 cm) baking dish. Bake for 10 minutes, then set aside to cool.

          Make the filling:

            - In a large mixing bowl, combine the drained crushed pineapple, granulated sugar, and cornstarch. Stir well.

              - Add the eggs, vanilla extract, salt, and lemon juice to the bowl. Mix until everything is well incorporated.

                - Gently fold in the chopped macadamia nuts if you’re using them.

                  Assemble the bars:

                    - Pour the filling mixture over the cooled crust in the baking dish.

                      - Bake in the preheated oven for about 25-30 minutes, or until the filling is set and a toothpick inserted comes out clean.

                        Cool and serve:

                          - Remove the bars from the oven and let them cool in the baking dish for about 15 minutes before transferring to the refrigerator to chill for at least 2 hours.

                            - Once chilled, cut into squares and top each bar with a dollop of whipped cream and a sprinkle of shredded coconut.
