1 lb ground beef or Italian sausage

1 medium onion, chopped

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

4 cups beef broth

2 cups uncooked pasta (lasagna noodles broken into pieces)

1 tbsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1 (15 oz) container ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil or parsley for garnish

Instructions
 

Brown the Meat: In a large pot or Dutch oven, cook the ground beef or sausage over medium heat until browned. Drain excess fat if necessary.

    Sauté Aromatics: Add chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Add Tomatoes and Broth: Stir in the crushed tomatoes, beef broth, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.

        Cook the Pasta: Once boiling, add the broken lasagna noodles and reduce the heat. Let it simmer for about 10-12 minutes or until the noodles are al dente.

          Incorporate Cheeses: Reduce the heat to low. Stir in the ricotta, half of the mozzarella, and half of the Parmesan cheese until melted and creamy.

            Serve: Ladle the soup into bowls and top with the remaining mozzarella and Parmesan cheese. Garnish with fresh basil or parsley.
