1.5 lbs boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 (14 oz) can diced tomatoes, undrained

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp dried basil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup cooked pasta (like rotini or penne)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Season the chicken breasts with salt and pepper, then place them at the bottom of the crock pot.

    Add Vegetables: Add the diced onion and minced garlic on top of the chicken.

      Combine Start Ingredients: Pour in the chicken broth and undrained diced tomatoes over the chicken and onions.

        Season the Soup: Sprinkle the dried basil, dried oregano, and red pepper flakes (if using) over the mixture. Give it a gentle stir to combine everything.

          Cook: Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

            Shred Chicken: Once cooked, carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crock pot.
