Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 cloves garlic, minced

1/4 cup unsalted butter

2 tablespoons olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup white wine (such as Sauvignon Blanc)

1 lemon (zested and juiced)

Salt and black pepper to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Lemon wedges, for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

Sauté the Garlic: In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until the garlic is fragrant but not browned.

Add the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and black pepper. Cook for about 2-3 minutes, or until the shrimp turn pink and opaque, stirring occasionally.

Deglaze with Wine: Pour in the white wine and bring to a simmer. Allow it to cook for an additional 2-3 minutes, letting the alcohol evaporate and the sauce reduce slightly.

Mix in Lemon: Stir in the lemon zest and lemon juice. Taste and adjust seasoning with more salt and pepper if needed.

Combine Pasta and Sauce: Add the drained pasta to the skillet with the shrimp sauce. Toss to coat the pasta evenly, adding reserved pasta water a little at a time until the desired consistency is reached.

Serve and Garnish: Remove from heat and stir in freshly chopped parsley. Serve immediately, garnished with grated Parmesan cheese and lemon wedges on the side.
