Irish Bacon Cabbage and Potato Soup

Ingredients
  

4 slices of Irish bacon (or pancetta), diced

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups chicken or vegetable broth

1 small head of cabbage, chopped

2 carrots, diced

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced bacon and cook until it is crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

    Sauté Aromatics: In the same pot, add the chopped onions and garlic. Sauté for 3-4 minutes until the onions are translucent and aromatic.

      Add Vegetables: Stir in the diced potatoes, carrots, and chopped cabbage. Sauté for another 5 minutes, allowing the veggies to soften slightly.

        Simmer the Soup: Pour in the chicken or vegetable broth and add the dried thyme and bay leaf. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 20-25 minutes until the potatoes and carrots are tender.

          Season: Remove the bay leaf, then season the soup with salt and pepper to taste. If you want a creamier texture, you can blend a portion of the soup with an immersion blender.

            Add Bacon Back In: Stir the crispy bacon back into the soup just before serving, reserving some for garnish.

              Serve: Ladle the soup into bowls and garnish with fresh parsley on top.
