Ingredients
  

2 tablespoons olive oil

1 lb boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

1 medium onion, diced

3 cloves garlic, minced

1 cup long-grain white rice

2 cups chicken broth

1 cup mixed vegetables (peas, carrots, and corn)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: Start the Instant Pot on the Sauté mode. Add olive oil and allow it to heat. Once hot, add the diced chicken, seasoning with salt and pepper. Sauté until the chicken is browned (about 5-7 minutes). Remove the chicken and set aside.

    Sauté Onion and Garlic: In the same pot, add the diced onion and sauté for 2-3 minutes until translucent. Then add the minced garlic and cook for an additional 1 minute.

      Add Rice and Seasoning: Stir in the long-grain rice, thyme, and paprika, ensuring the rice is well coated with the onion and garlic mixture.

        Combine All Ingredients: Pour in the chicken broth and mix well. Add mixed vegetables and return the browned chicken to the pot, spreading it evenly over the rice mixture.

          Pressure Cook: Secure the lid, ensuring it’s set to the sealing position. Select the Manual or Pressure Cook setting and set the cooking time to 8 minutes.

            Natural Release: Once the cooking cycle is complete, let the Instant Pot naturally release pressure for 10 minutes. After 10 minutes, carefully switch to the venting position to release any remaining pressure.

              Fluff and Serve: Open the lid and gently fluff the chicken and rice with a fork. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
