1 cup cornmeal

½ teaspoon salt

1 teaspoon sugar (optional)

1 cup boiling water

2 tablespoons vegetable oil (plus more for frying)

In a large mixing bowl, combine the cornmeal, salt, and sugar (if using). Mix well to distribute the ingredients evenly.

    Carefully pour the boiling water into the dry ingredients, stirring continuously with a wooden spoon or spatula until a thick batter forms. The hot water will cook the cornmeal slightly, creating a smoother texture.

      Allow the mixture to cool for about 5 minutes until it’s comfortable to handle. Once cooled, stir in the 2 tablespoons of vegetable oil.

        Heat about ½ inch of vegetable oil in a cast-iron skillet or frying pan over medium-high heat. To check if the oil is ready, drop a small amount of the batter into the oil; it should sizzle immediately.

          Using wet hands or a spoon, form small patties (about 2-3 inches in diameter) with the batter and carefully place them into the hot oil, making sure not to overcrowd the pan.

            Fry the cornbread patties for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spatula to flip them and remove them when done.

              Place the fried cornbread on a plate lined with paper towels to drain any excess oil.
