2 cups rolled oats

1/2 cup sliced almonds

1/2 cup honey

1/4 cup coconut oil (melted)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries (or any other dried fruit)

1/4 cup mini chocolate chips (optional)

Muffin tin (for shaping the cups)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, sliced almonds, cinnamon, and salt. Stir well to ensure everything is evenly mixed.

      Melt Ingredients: In a separate bowl, mix together the melted coconut oil, honey, and vanilla extract until fully combined.

        Combine Wet and Dry: Pour the wet mixture into the bowl with the dry ingredients and mix thoroughly until all the oats and almonds are well coated.

          Add Dried Fruit and Optional Ingredients: Gently fold in the dried cranberries and mini chocolate chips (if using).

            Shape into Cups: Lightly grease a muffin tin with cooking spray or oil. Spoon the granola mixture into each muffin cup, pressing down firmly to form a compact shape (this will help them hold together after baking).

              Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the edges are golden brown.

                Cool Completely: Remove from the oven and let the granola cups cool in the tin for about 10 minutes before carefully transferring them to a wire rack to cool completely. They will harden as they cool.
