1 cup granulated sugar

1/4 cup unsalted butter, cut into pieces

1/2 cup heavy cream

1/4 cup light corn syrup

1/2 teaspoon sea salt (plus extra for sprinkling)

1 teaspoon vanilla extract

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later. Grease the parchment with a little butter or non-stick spray.

    Cook the Sugar: In a medium saucepan over medium heat, combine the granulated sugar and corn syrup. Stir gently until the sugar has dissolved. Stop stirring at this point and allow the mixture to cook.

      Heat Until Golden: Continue to cook until the mixture turns a deep amber color. This should take about 8-10 minutes. Keep a close eye to prevent burning.

        Add Butter and Cream: Once the sugar reaches the desired color, quickly add the butter and heavy cream. The mixture will bubble vigorously, so be cautious. Stir until fully combined and smooth.

          Incorporate Salt and Vanilla: Remove the saucepan from the heat. Stir in the sea salt and vanilla extract. Mix well.
