1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup powdered sugar (for dusting)

Fresh berries (for garnish)

Whipped cream (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin pan with cooking spray or line it with mini muffin liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the flour mixture, mixing until just combined. Don’t overmix!

            Fill Muffin Pan: Carefully spoon the batter into the prepared mini muffin pan, filling each cup about 2/3 full.

              Bake: Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of a cake comes out clean.

                Cool Cakes: Remove the pan from the oven and let the mini cakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  Dust with Powdered Sugar: Once cooled, dust the mini cakes with powdered sugar using a fine sieve.

                    Serve and Garnish: Serve warm or at room temperature, garnished with fresh berries and a dollop of whipped cream, if desired.
