1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, diced

1 bell pepper, chopped (red or yellow for sweetness)

1 tsp dried Italian herbs (oregano, basil, thyme)

1/2 tsp red pepper flakes (optional, for heat)

4 cups chicken or vegetable broth

1 (14 oz) can diced tomatoes, undrained

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach or kale, roughly chopped

Salt and pepper to taste

Fresh basil, for garnish

Crusty bread, for serving

Instructions
 

In a large pot over medium heat, add the Italian sausage. Break it apart with a wooden spoon and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.

    In the same pot, add the diced onion, garlic, carrots, celery, and bell pepper. Sauté for about 5-7 minutes, or until the vegetables begin to soften.

      Stir in the dried Italian herbs and red pepper flakes (if using), allowing the spices to bloom for about 1 minute.

        Add the chicken or vegetable broth and diced tomatoes to the pot. Bring the mixture to a simmer, scraping the bottom of the pot to deglaze and incorporate any flavorful bits stuck to the bottom.

          Return the cooked Italian sausage to the pot and simmer for an additional 10 minutes to allow the flavors to meld.

            Lower the heat and stir in the heavy cream and Parmesan cheese, stirring until the cheese is melted and the soup is creamy and velvety.

              Add the fresh spinach or kale, allowing it to wilt for about 2 minutes. Season with salt and pepper to taste.

                Serve the soup hot, garnished with fresh basil leaves and additional Parmesan if desired. Pair with crusty bread for dipping.
