8 oz penne pasta

1 lb Italian sausage (mild or spicy, your choice), casings removed

2 cups fresh spinach, chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tsp dried Italian herbs (oregano, basil, thyme)

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnishing)

Cook the Sausage: In a large skillet or deep pan over medium heat, add the olive oil. Once heated, crumble in the Italian sausage. Cook until browned, about 5-7 minutes, breaking it apart with a wooden spoon as it cooks. Remove excess fat if necessary.

    Sauté the Aromatics: Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic, and cook for an additional 1 minute, until fragrant.
