Ingredients
  

1 pound kielbasa sausage, sliced

4 cups potatoes, peeled and diced (about 4 medium potatoes)

1 medium onion, diced

3 cloves garlic, minced

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup sour cream

1 cup milk

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Kielbasa: In a large skillet over medium heat, add olive oil. Once hot, add the sliced kielbasa and sauté until browned, about 5-7 minutes. Remove from skillet and set aside.

      Sauté Vegetables: In the same skillet, add the onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

        Combine Mixture: In a large mixing bowl, combine the diced potatoes, cooked kielbasa, sautéed onion and garlic, shredded cheddar cheese, mozzarella cheese, sour cream, milk, paprika, thyme, salt, and pepper. Stir until well combined.

          Transfer to Casserole Dish: Pour the potato mixture into a greased 9x13-inch casserole dish, spreading it out evenly.

            Add Breadcrumbs (Optional): If you prefer a crunchy topping, sprinkle breadcrumbs evenly over the top of the casserole.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender.

                Garnish & Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley if desired. Serve warm and enjoy!
