4 boneless, skinless chicken breasts

4 slices of lean turkey ham (or low-fat prosciutto)

4 slices of low-fat Swiss cheese

1 cup whole wheat breadcrumbs

1/2 cup plain Greek yogurt

1/4 cup Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

Olive oil spray (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound the chicken until it’s about 1/4 inch thick.

      Lay in the Fillings: Spread a thin layer of Greek yogurt over each chicken breast, followed by a slice of turkey ham and a slice of Swiss cheese.

        Roll the Chicken: Starting from one end, carefully roll up each chicken breast, securing the filling inside. You can use toothpicks to hold the chicken together if needed.

          Set Up Breading Station: In a shallow dish, combine the whole wheat breadcrumbs, garlic powder, onion powder, thyme, salt, and pepper. In another shallow dish, mix the Dijon mustard with a splash of water until it’s easily spreadable.

            Coat the Chicken: Dip each rolled chicken in the mustard mixture, letting the excess drip off, then roll it in the breadcrumb mixture to coat thoroughly.

              Prepare for Baking: Place the coated chicken rolls in a baking dish sprayed lightly with olive oil spray.

                Bake: Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.

                  Serve: Allow the chicken to rest for a few minutes before slicing. Serve warm with a side of steamed vegetables or a fresh salad for a complete meal.
