4 medium-sized russet potatoes

4 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon smoked paprika

½ cup grated Parmesan cheese (optional)

Fresh herbs (rosemary or thyme) for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Scrub the potatoes clean under water and dry them thoroughly. Using a sharp knife, make deep cuts along each potato, about 1/8 inch apart, stopping just before you reach the bottom so that they stay intact.

      Season the Potatoes: In a small bowl, mix together the olive oil, minced garlic, sea salt, black pepper, and smoked paprika. Brush this mixture generously over each potato, ensuring it seeps into the cuts.

        Bake: Place the potatoes on a baking tray and bake for about 45-50 minutes, or until the edges become crispy and the potatoes are tender. Halfway through the baking process, carefully brush the potatoes with any oil mixture that may have dripped onto the tray.

          Cheesy Option: If desired, sprinkle the grated Parmesan cheese over the potatoes in the last 10 minutes of baking to allow it to melt and form a golden crust.
